Instructions

  1. Heat the Cream: In a small saucepan over medium heat, bring the heavy whipping cream to a simmer (about 185°F). Do not let it boil.
  2. Combine with Chocolate: Place the chopped dark chocolate in a medium heatproof bowl. Pour the hot cream over the chocolate and let it sit for a minute. Then, whisk until the mixture is smooth and the chocolate is fully melted.
  3. Add Flavorings: Stir in the Amaretto liqueur and almond extract until well combined.
  4. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or until the mixture is firm enough to scoop.
  5. Form Truffles: Using a small cookie scoop or a spoon, portion out the mixture and roll it into 1-inch balls between your palms. If the mixture is too sticky, lightly dust your hands with cocoa powder or spray them with a bit of oil.
  6. Coat the Truffles: Roll each truffle in the unsweetened cocoa powder until fully coated. For variety, you can also roll them in finely chopped nuts, sprinkles, or crushed cookies.
  7. Store and Serve: Place the coated truffles on a baking sheet lined with parchment paper. Refrigerate for about 30 minutes to set. Store the truffles in an airtight container in the refrigerator for up to one week. Allow them to sit at room temperature for a few minutes before serving to enhance their flavor and texture.
