  • 2 lbs (1 kg) chicken thighs or drumsticks, skinless
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon cayenne pepper (optional, for heat)
  • 1 large tomato, diced
  • 1 cup (240 ml) chicken broth
  • 1 cup (240 ml) coconut milk
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • Salt and black pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prep the chicken: Season the chicken pieces with salt and pepper. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Sear the chicken on both sides until golden brown. Remove and set aside.
  2. Sauté the aromatics: In the same pot, add the chopped onion and sauté for 5 minutes, or until softened. Stir in the garlic and ginger, cooking for another minute.
  3. Add the spices: Sprinkle in the curry powder, turmeric, paprika, coriander, and cayenne pepper. Stir continuously for 1-2 minutes to toast the spices and release their aromas.
  4. Build the sauce: Add the diced tomato and cook for 3-4 minutes until softened. Pour in the chicken broth and coconut milk, stirring to combine.
  5. Cook the chicken and vegetables: Return the chicken to the pot along with the sweet potatoes and red bell pepper. Cover and simmer over low heat for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Season and garnish: Adjust the seasoning with more salt and pepper, if needed. Garnish with fresh cilantro before serving.

  • Serve with steamed rice, flatbread, or a side of greens for a complete meal.
  • Substitute regular potatoes or squash for sweet potatoes if preferred.
