This creamy, comforting old-fashioned rice pudding is a timeless dessert that combines simple ingredients into a rich and satisfying treat. Perfectly sweetened with warm notes of vanilla and cinnamon, it’s a dessert your family will love.

Ingredients

Scale
  • 3 cups whole milk
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional, for garnish)
  • 1/4 cup raisins (optional)

Instructions

  1. In a medium saucepan, combine the milk, water, rice, sugar, and salt.
  2. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low. Cover and simmer, stirring occasionally, until the rice is tender and most of the liquid is absorbed (about 20-25 minutes).
  3. In a small bowl, whisk the egg. Gradually stir a few spoonfuls of the hot rice mixture into the egg to temper it.
  4. Add the tempered egg back into the saucepan, stirring quickly to combine.
  5. Stir in the heavy cream and vanilla extract. Cook over low heat for another 5 minutes, or until the pudding thickens slightly.
  6. Remove from heat and let cool for a few minutes. If using raisins, fold them in at this stage.
  7. Serve warm or chilled, topped with a sprinkle of ground cinnamon if desired.

Notes

  • For an even creamier pudding, substitute whole milk with half-and-half.
  • Add a pinch of nutmeg for extra warmth and flavor.
  • The pudding will thicken as it cools; add a splash of milk when reheating if needed.
