This Bacon Cheeseburger Grilled Cheese combines the best of both worlds: a classic cheeseburger and a gooey grilled cheese sandwich. Crispy bacon, seasoned ground beef, and melty cheddar cheese are tucked between two buttery slices of bread and grilled to golden perfection. Perfect for lunch, dinner, or an indulgent snack!

For the Filling:

  • ½ lb (225g) ground beef
  • 4 strips of bacon, cooked and crumbled
  • 1 small onion, finely diced
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp ketchup
  • 1 tsp mustard

For the Sandwich:

  • 8 slices of bread (white or sourdough recommended)
  • 4 tbsp butter, softened
  • 8 slices cheddar cheese

Instructions

  1. Prepare the Beef Mixture:
    • Heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks.
    • Add the onion, garlic powder, salt, and pepper. Cook for 2-3 minutes until the onion softens.
    • Stir in the ketchup and mustard. Mix well, then remove from heat.
  2. Assemble the Sandwiches:
    • Butter one side of each bread slice. Place 4 slices, butter-side down, on a clean surface.
    • Add one slice of cheddar cheese on each bread slice, followed by a generous scoop of the beef mixture and crumbled bacon.
    • Top with another slice of cheddar cheese, then place another bread slice on top, butter-side up.
  3. Grill the Sandwiches:
    • Heat a skillet or griddle over medium heat.
    • Place the sandwiches on the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and crispy and the cheese has melted.
  4. Serve and Enjoy:
    • Slice each sandwich in half and serve warm.

Notes

  • Feel free to customize the cheese—pepper jack or gouda would also work well.
  • You can add sliced pickles or tomatoes for extra flavor.
