For the Pork Chops:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil

For the Bacon Mushroom Sauce:

  • 6 slices bacon, diced
  • 2 cups mushrooms, sliced (button or cremini work well)
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Season the Pork Chops:
    Pat the pork chops dry with a paper towel. Season both sides with salt, pepper, garlic powder, and onion powder.

  2. Cook the Pork Chops:
    Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes per side, until golden brown. Remove from the skillet and set aside.

  3. Cook the Bacon:
    In the same skillet, add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.

  4. Sauté the Mushrooms:
    Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown and tender. Add the minced garlic and cook for 1 minute until fragrant.

  5. Make the Sauce:
    Pour in the chicken broth, scraping up any browned bits from the skillet. Stir in the heavy cream, Parmesan cheese, thyme, smoked paprika, salt, and pepper. Simmer for 2-3 minutes until the sauce thickens slightly.

  6. Combine and Simmer:
    Return the pork chops and cooked bacon to the skillet, spooning the sauce over the top. Cover and simmer for 5-7 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).

  7. Serve:
    Remove from heat and let rest for a few minutes. Serve the pork chops with the creamy bacon mushroom sauce spooned over the top.
