Baked Chocolate Chip Donuts are a delightful treat that combines the classic flavors of chocolate chips with the lightness of baked donuts. These donuts are easy to make and perfect for breakfast or a sweet snack.

For the Donuts:

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) buttermilk, at room temperature
  • 1 large egg, at room temperature
  • 2 tablespoons (30g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) mini chocolate chips

For the Chocolate Glaze:

  • 1/2 cup (85g) semi-sweet chocolate chips
  • 2 tablespoons (30ml) heavy cream
  • 1 teaspoon coconut oil or unsalted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick cooking spray.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix, as this can lead to dense donuts. Fold in the mini chocolate chips.
  5. Fill Donut Pan: Transfer the batter to a piping bag or a zip-top bag with the corner cut off. Pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.
  6. Bake: Bake for 10-12 minutes, or until a toothpick inserted into the center of a donut comes out clean. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  7. Prepare Chocolate Glaze: In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until the mixture is smooth and glossy. Stir in the coconut oil or butter until fully incorporated.
  8. Glaze Donuts: Once the donuts are completely cooled, dip the top of each donut into the chocolate glaze, allowing any excess to drip off. Place the glazed donuts back on the wire rack and let the glaze set for about 10 minutes before serving.

Notes

  • For added flavor, sprinkle extra mini chocolate chips or chocolate sprinkles on top of the glaze before it sets.
  • These donuts are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 2 days.
