Baked Feta Eggs is a delightful Mediterranean-inspired dish that combines creamy feta cheese, juicy tomatoes, and perfectly baked eggs. It’s simple to prepare and makes for a satisfying breakfast or brunch option.

Ingredients

Scale
  • 1 block (about 200g) feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)
  • Crusty bread or pita, for serving (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Baking Dish:
    • Place the block of feta in the center of a medium-sized, oven-safe baking dish.
    • Arrange the halved cherry tomatoes around the feta.
  3. Season and Add Olive Oil:
    • Drizzle the olive oil over the feta and tomatoes.
    • Sprinkle dried oregano, salt, and freshly ground black pepper over the dish.
  4. Bake the Feta and Tomatoes:
    • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the feta is soft and the tomatoes are blistered.
  5. Add the Eggs:
    • Remove the dish from the oven.
    • Carefully crack the eggs into the dish, spacing them evenly around the feta and tomatoes.
  6. Bake Until Eggs Are Set:
    • Return the dish to the oven and bake for an additional 10-15 minutes, or until the egg whites are set but the yolks remain slightly runny (adjust the time based on your preferred egg doneness).
  7. Garnish and Serve:
    • Once done, remove from the oven and garnish with chopped fresh parsley or basil.
    • Serve warm with crusty bread or pita to soak up the delicious sauce.

  • Variations: Feel free to add other vegetables like spinach, bell peppers, or olives to enhance the dish’s flavor and nutritional profile.
