For the Donuts:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup buttermilk
  • 2 tbsp unsalted butter, melted
  • 1 large egg
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

For the Glaze:

  • 1 cup powdered sugar
  • 2–3 tbsp fresh lemon juice
  • ½ tsp lemon zest

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk together the buttermilk, melted butter, egg, lemon juice, lemon zest, and vanilla extract.
  4. Combine the mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in blueberries: Gently fold in the blueberries to ensure even distribution.
  6. Fill the donut pan: Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.
  7. Bake: Bake in the preheated oven for 10–12 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  8. Cool: Allow the donuts to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Make the glaze: In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth. Adjust the consistency with more lemon juice if needed.
  10. Glaze the donuts: Dip the tops of the cooled donuts into the glaze, letting the excess drip off. Place the donuts back on the wire rack to set.
