Berry Custard Pastries are delightful treats featuring buttery puff pastry filled with creamy custard and topped with fresh, juicy berries. Perfect for breakfast, brunch, or dessert, these pastries are easy to make and sure to impress.

For the Pastries:

  • 1 sheet of puff pastry, thawed
  • 1 egg, beaten (for egg wash)

For the Custard:

  • 1 cup whole milk
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For the Topping:

  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 2 tablespoons powdered sugar (optional, for dusting)

Instructions

  1. Prepare the Custard:
    • In a saucepan, heat the milk over medium heat until it just begins to simmer.
    • In a bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
    • Gradually pour the hot milk into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan.
    • Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the vanilla extract. Cover and refrigerate to cool.
  2. Prepare the Pastries:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Roll out the puff pastry on a lightly floured surface. Cut into 6 squares or rectangles.
    • Lightly score a border about 1/2 inch from the edges of each square without cutting all the way through.
    • Brush the edges with beaten egg wash.
  3. Bake the Pastries:
    • Place the pastry squares on the prepared baking sheet. Bake for 12–15 minutes, or until golden brown and puffed. Let cool.
  4. Assemble the Pastries:
    • Press down the centers of the pastries to create a well. Spoon custard into the well of each pastry.
    • Top with fresh berries. Dust with powdered sugar if desired.

Notes

  • These pastries are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
  • Use any combination of fresh berries you like, or substitute with other fruits.
