  • Blueberry Filling:
    • 1 cup fresh blueberries
    • 1 tablespoon granulated sugar
    • 1 tablespoon lemon juice
  • Egg Wash:
    • 1 egg, beaten (optional, for a golden finish)
  • Optional Toppings:
    • Powdered sugar for dusting
    • Lemon glaze (mix powdered sugar with lemon juice)

Instructions

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Cream Cheese Filling:
    • In a bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and lemon zest until smooth and creamy. Set aside.
  3. Prepare the Blueberries:
    • In another bowl, combine the blueberries, granulated sugar, and lemon juice. Toss gently to coat the blueberries.
  4. Roll Out the Puff Pastry:
    • On a lightly floured surface, roll out the puff pastry sheet to smooth it out. Cut it into 6 equal squares (about 4×4 inches each).
  5. Assemble the Pastries:
    • Place about 1 tablespoon of the cream cheese filling in the center of each pastry square. Top with a spoonful of the blueberry mixture.
    • Fold the corners of the pastry square towards the center, pinching to seal, or leave them open for a more rustic look.
  6. Brush with Egg Wash (Optional):
    • If using, brush the beaten egg over the tops of the pastries for a golden finish.
  7. Bake:
    • Place the assembled pastries on the prepared baking sheet. Bake for 15–18 minutes or until the pastry is golden brown and puffed.
  8. Serve:
    • Let the pastries cool slightly, then dust with powdered sugar or drizzle with lemon glaze if desired. Serve warm or at room temperature.
