This hearty breakfast casserole combines savory sausage, crispy hash browns, and melted cheese, all bound together with fluffy eggs. It’s an ideal dish for gatherings or a make-ahead meal for your family.

  • 2 pounds pork sausage
  • 12 large eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 3 cups frozen shredded hash browns, thawed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the sausage until browned and crumbled. Drain excess fat.
  3. In the same skillet, sauté the diced bell peppers until tender.
  4. In a large bowl, whisk together the eggs, sour cream, milk, salt, and pepper until smooth.
  5. Stir in the cooked sausage, sautéed bell peppers, chopped green onions, hash browns, and 1.5 cups of the shredded cheddar cheese.
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Sprinkle the remaining 0.5 cup of cheddar cheese on top.
  8. Bake for 45-50 minutes, or until the eggs are set and the top is golden brown.
  9. Allow the casserole to rest for 10 minutes before serving.

Notes

  • This casserole can be assembled the night before and baked in the morning.
  • Feel free to substitute the sausage with bacon or ham, and add other vegetables like spinach or mushrooms as desired.
