  • Puff Pastry:
    • 1 package (2 sheets) store-bought puff pastry, thawed
  • Filling:
    • 4 large eggs
    • 1/4 cup milk
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup cooked and crumbled bacon or sausage
    • 1/4 cup diced bell peppers (optional)
    • 1/4 cup diced onions (optional)
    • Salt and pepper, to taste
  • Egg Wash:
    • 1 large egg, beaten
    • 1 tablespoon water

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the filling:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
    • Heat a non-stick skillet over medium heat and scramble the egg mixture until just set. Remove from heat.
    • Stir in the shredded cheese, bacon or sausage, bell peppers, and onions. Set aside to cool slightly.
  3. Prepare the puff pastry:
    • Unfold the puff pastry sheets and cut each sheet into 6 equal rectangles (12 total).
    • Place 6 rectangles on the prepared baking sheet.
  4. Fill the pastry:
    • Spoon a generous amount of the egg mixture onto the center of each rectangle, leaving a small border around the edges.
    • Brush the edges with the egg wash and place the remaining pastry rectangles on top. Press the edges together with a fork to seal.
  5. Egg wash and bake:
    • Brush the tops of the pastries with the egg wash. Use a knife to cut small vents on the top of each pastry.
    • Bake for 15-20 minutes, or until the pastries are golden brown and puffed.
  6. Cool and serve: Allow the pastries to cool slightly before serving.

Notes

  • These bars can be customized with your favorite fillings, such as spinach, mushrooms, or diced ham.
  • They freeze well. To reheat, bake in a 375°F oven for 8-10 minutes.
