Buffalo Chicken Bombs are a delicious appetizer featuring spicy buffalo chicken and cheese encased in a soft biscuit dough, baked until golden brown.

Ingredients

Scale
  • 1½ cups cooked, shredded chicken
  • ¼ cup buffalo sauce
  • â…“ cup shredded mozzarella cheese
  • 1 (8-count) can refrigerated buttermilk biscuits
  • 2 tablespoons salted butter, melted
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon garlic powder
  • Ranch or blue cheese dressing, for dipping

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Filling: In a medium bowl, combine the shredded chicken, buffalo sauce, and mozzarella cheese. Mix until well combined.
  3. Flatten Biscuits: On a clean surface, use a rolling pin to flatten each biscuit into a circle about ⅛-inch thick.
  4. Add Filling: Place approximately ¼ cup of the buffalo chicken mixture in the center of each flattened biscuit.
  5. Seal Bombs: Bring the edges of the biscuit dough together over the filling and pinch tightly to seal, forming a ball. Place each sealed ball seam-side down on an ungreased baking sheet.
  6. Bake: Bake in the preheated oven for about 15 minutes, or until the biscuits are golden brown.
  7. Prepare Butter Topping: While the bombs are baking, combine the melted butter, chopped parsley, and garlic powder in a small bowl.
  8. Add Butter Topping: Immediately after removing the bombs from the oven, brush the tops with the butter mixture.
  9. Serve: Serve warm with ranch or blue cheese dressing for dipping.

Notes

  • For added flavor, consider incorporating crumbled blue cheese into the filling.
  • Adjust the amount of buffalo sauce to suit your preferred spice level.
  • These bombs can also be prepared in an air fryer at 350°F (175°C) for 11-12 minutes, or until golden brown.
