  • Sliced bananas
  • Additional crushed vanilla wafers

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Line a mini muffin tin with mini cupcake liners or lightly grease the tin.
    • In a medium bowl, combine the vanilla wafer crumbs, melted butter, and granulated sugar. Mix until well combined.
    • Press about 1 tablespoon of the mixture firmly into the bottom of each mini muffin cup to form a crust.
    • Bake for 5-7 minutes, or until set. Remove from the oven and allow to cool.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
    • Mix in the vanilla extract and sour cream until well combined.
    • Gently fold in the mashed banana and whipped topping until fully incorporated.
  3. Assemble the Cheesecake Bites:
    • Spoon or pipe the cheesecake filling into the cooled crusts, filling them to the top.
    • Refrigerate the cheesecake bites for at least 2-3 hours, or until firm.
  4. Serve:
    • Before serving, top each cheesecake bite with a dollop of whipped topping, a slice of banana, and a sprinkle of crushed vanilla wafers.
