Ingredients

Scale

For the Burritos:

  • 1 lb (450 g) ground beef
  • 1 packet (1 oz/28 g) taco seasoning
  • 1/4 cup water
  • 1 cup shredded cheddar cheese (or cheese blend)
  • 1 cup cooked white rice
  • 1/2 cup salsa
  • 4 large flour tortillas (10-inch)
  • 1/2 cup sour cream
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped green onions

For the Fries:

  • 4 medium russet potatoes (or frozen fries for convenience)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Beef Filling:
    • In a large skillet over medium heat, cook the ground beef until browned, about 5–7 minutes.
    • Drain excess grease, then stir in taco seasoning and 1/4 cup water. Let simmer for 3–5 minutes.
  2. Assemble the Burritos:
    • Lay each tortilla flat on a clean surface. Spread 2 tablespoons of sour cream in the center.
    • Add a scoop of cooked rice, a generous portion of beef mixture, a sprinkle of shredded cheese, and a dollop of salsa.
    • Top with lettuce, diced tomatoes, and green onions.
    • Fold in the sides of the tortilla and roll tightly to form a burrito.
  3. Prepare the Fries:
    • Preheat the oven to 425°F (220°C).
    • If using fresh potatoes, cut them into thin strips. Toss with olive oil, paprika, garlic powder, salt, and pepper.
    • Spread fries in a single layer on a baking sheet. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  4. Heat the Burritos:
    • Warm the assembled burritos in a dry skillet or on a grill over medium heat for 2–3 minutes on each side until slightly crispy and heated through.
  5. Serve:
    • Serve burritos hot alongside the crispy fries. Add extra salsa or dipping sauces if desired.

Notes

  • Feel free to swap the ground beef for ground turkey or a plant-based alternative for a different twist.
  • Add guacamole for extra flavor!
  • For a shortcut, use store-bought frozen fries.
