Tender, juicy chicken fritters loaded with melted mozzarella cheese and fresh herbs. These flavorful patties are perfect as an appetizer, snack, or main course. Serve them with a tangy garlic aioli for an extra burst of flavor.

Ingredients

Scale
  • 1.5 lbs (680g) boneless, skinless chicken breasts, finely diced
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or cornstarch for a gluten-free option)
  • 1 1/3 cups (4 oz) shredded mozzarella cheese
  • 1.5 tablespoons fresh dill, chopped
  • 1/2 teaspoon salt (adjust to taste)
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Optional Garlic Aioli:

  • 1/3 cup mayonnaise
  • 1 garlic clove, pressed
  • 1/2 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Prepare the Chicken Mixture: In a large bowl, combine the finely diced chicken, eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.

  • Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight. This helps the mixture firm up, making it easier to shape and cook the fritters.

  • Form the Fritters: Heat olive oil in a large non-stick skillet over medium heat. Scoop heaping tablespoons of the chicken mixture into the skillet, flattening each slightly with the back of the spoon to form patties.

  • Cook the Fritters: Sauté the fritters for about 3-4 minutes on each side, or until they are golden brown and the chicken is cooked through. Adjust the heat as necessary to prevent burning.

  • Prepare the Garlic Aioli (Optional): While the fritters are cooking, mix the mayonnaise, pressed garlic, lemon juice, salt, and black pepper in a small bowl until smooth.

  • Serve: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve warm with the garlic aioli on the side for dipping.

Notes

  • For added flavor, consider incorporating chopped green onions or parsley into the chicken mixture.
  • These fritters can be served as a main dish alongside a fresh salad or as appetizers at a gathering.
  • To ensure even cooking, avoid overcrowding the skillet; cook the fritters in batches if necessary.
