These Cheesy Mashed Potato Puffs are a fun and delicious twist on classic mashed potatoes. Baked to golden perfection, these creamy, cheesy bites are crispy on the outside and fluffy inside. They’re perfect as a snack, appetizer, or side dish for any occasion.

Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 2 large eggs, lightly beaten
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (optional)
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • Non-stick cooking spray or butter (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin with non-stick spray or butter.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, beaten eggs, milk, Parmesan cheese, green onions (if using), garlic powder, salt, and pepper. Mix until well combined.
  3. Spoon the mixture evenly into the prepared muffin cups, filling them about 3/4 full.
  4. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and slightly crispy.
  5. Remove from the oven and let the puffs cool for 5 minutes before carefully removing them from the muffin tin.
  6. Serve warm and enjoy!
