  • 1/4 teaspoon salt

For the Cheesecake Layer:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped topping (such as Cool Whip)

For the Pudding Layer:

  • 2 packages (3.4 ounces each) cheesecake-flavored instant pudding mix
  • 3 cups cold whole milk
  • 1 cup whipped topping

For the Topping:

  • 1 can (21 ounces) cherry pie filling
  • 1 cup whipped topping
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Prepare the Crust:
    • In a medium bowl, combine vanilla wafer crumbs, melted butter, and salt. Mix until the crumbs are fully coated.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even layer.
    • Place the crust in the refrigerator to chill while preparing the next layers.
  2. Cheesecake Layer:
    • In a large bowl, beat the softened cream cheese until smooth and creamy.
    • Add powdered sugar and vanilla extract; mix until well combined.
    • Gently fold in 1 1/2 cups of whipped topping until incorporated.
    • Spread the cheesecake mixture evenly over the chilled crust.
  3. Pudding Layer:
    • In another bowl, whisk together the cheesecake-flavored pudding mixes and cold milk until the mixture thickens.
    • Fold in 1 cup of whipped topping.
    • Carefully spread the pudding mixture over the cheesecake layer.
  4. Topping:
    • Evenly spoon the cherry pie filling over the pudding layer.
    • Gently spread the remaining whipped topping over the cherry layer.
    • Sprinkle chopped pecans or walnuts on top, if desired.
  5. Chill:
    • Cover the dessert and refrigerate for at least 2 hours, or until set.
  6. Serve:
    • Once set, slice into squares and serve chilled.

Notes

  • Ensure the cream cheese is fully softened to achieve a smooth cheesecake layer.
  • For a firmer crust, consider baking it at 350°F (175°C) for 10 minutes, then let it cool completely before adding the layers.
  • This dessert can be made a day in advance; store it covered in the refrigerator until ready to serve.
