Chicken Bubble Biscuit Bake Casserole is a comforting dish that combines tender chicken, creamy sauce, crispy bacon, and fluffy biscuit pieces, all topped with melted cheese. It’s perfect for a family dinner or potluck, offering a delightful blend of flavors and textures.

Ingredients

Scale
  • 3 cups cooked, chopped chicken: You can use rotisserie chicken, boiled, or even canned chicken.
  • 2 cans (10.5 oz each) cream of chicken soup: Provides a creamy base for the casserole.
  • 1½ cups sour cream: Adds richness and tanginess.
  • 2 cups shredded cheddar cheese, divided: For a cheesy flavor; 1 cup mixed in, 1 cup on top.
  • 2 tablespoons ranch dressing mix: Adds a zesty kick.
  • ¼ cup cooked, chopped bacon: For a smoky, savory element.
  • 1 can (12 oz) refrigerated biscuit dough: Cut into quarters; these will “bubble” up during baking.

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Prepare Mixture: In a large bowl, combine the chopped chicken, cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, ranch dressing mix, and chopped bacon. Mix until well combined.
  3. Add Biscuits: Cut each biscuit into four pieces. Gently fold the biscuit pieces into the chicken mixture, ensuring they’re well coated.
  4. Assemble Casserole: Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  5. Bake: Place the dish in the preheated oven and bake for 25-35 minutes, or until the biscuits are golden brown and the casserole is bubbly.
  6. Serve: Allow the casserole to cool for a few minutes before serving. Enjoy it warm, perhaps with a side salad or steamed vegetables.

Notes

  • Biscuit Dough: If you can’t find the 12 oz can of refrigerated biscuits, you can use a larger can (like the 16 oz Grands biscuits). Just leave out two or three biscuits to prevent overcrowding, and adjust the baking time to ensure the biscuits cook through.
  • Add Vegetables: For added nutrition, consider mixing in vegetables like peas, carrots, or broccoli.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
