Chicken Chow Mein is a classic Chinese dish featuring stir-fried noodles, tender chicken, and crisp vegetables, all tossed in a savory sauce. This homemade version is both delicious and healthier than takeout.

For the Chow Mein:

  • 12 oz (340g) chow mein noodles
  • 1 lb (450g) boneless, skinless chicken breast or thighs, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 2 cups shredded green cabbage
  • 1 large carrot, julienned
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 3 green onions, cut into 2-inch pieces

For the Sauce:

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon light sesame oil
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon cornstarch
  • 1/4 cup chicken broth

Instructions

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, cornstarch, and chicken broth until smooth. Set aside.

  • Cook the Noodles: Prepare the chow mein noodles according to the package instructions. Drain, rinse with cold water, and set aside.

  • Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken and stir-fry until fully cooked and lightly browned, about 5-6 minutes. Remove the chicken from the wok and set aside.

  • Stir-Fry Vegetables: In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the shredded cabbage and julienned carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  • Combine Ingredients: Return the cooked chicken to the wok, along with the cooked noodles. Pour the prepared sauce over the top and toss everything together to ensure even coating. Add the bean sprouts and green onions, and stir-fry for an additional 2 minutes until everything is well combined and heated through.

  • Serve: Remove from heat and serve hot.

Notes

  • For added flavor, consider marinating the chicken in a bit of soy sauce and cornstarch for 10 minutes before cooking.

  • Feel free to substitute or add other vegetables such as bell peppers, snow peas, or broccoli to suit your taste.
