Ingredients

Scale
  • 5 ½ cups shredded rotisserie chicken
  • 2 cups cubed cooked ham
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt (adjust to taste)
  • 1 ¼ cups shredded Swiss cheese (about 5 ounces)
  • ¼ cup grated Parmesan cheese
  • 1 cup Panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  • Prepare the Oven and Dish:

    • Preheat your oven to 350°F (175°C).
    • Lightly grease a 9×13-inch casserole dish with cooking spray.
  • Assemble the Casserole:

    • Spread the shredded chicken evenly in the bottom of the prepared dish.
    • Layer the cubed ham over the chicken.
  • Make the Cheese Sauce:

    • In a medium saucepan over medium heat, melt the 4 tablespoons of butter.
    • Sprinkle in the flour, stirring constantly, and cook for 1-2 minutes until the mixture becomes a smooth paste.
    • Gradually whisk in the milk, ensuring a smooth consistency.
    • Add the Dijon mustard, lemon juice, garlic powder, and salt. Continue to whisk and cook until the sauce thickens, about 3-5 minutes.
    • Remove from heat and stir in the shredded Swiss and Parmesan cheeses until fully melted and the sauce is smooth.
    • Taste and adjust seasoning if necessary.
  • Combine and Top:

    • Pour the cheese sauce evenly over the chicken and ham layers in the casserole dish.
  • Prepare the Breadcrumb Topping:

    • In a small bowl, mix the Panko breadcrumbs with the melted butter until the crumbs are well-coated.
    • Sprinkle this mixture evenly over the top of the casserole.
  • Bake:

    • Place the casserole in the preheated oven and bake, uncovered, for 30-35 minutes, or until the breadcrumbs are golden brown and the casserole is bubbling.
  • Serve:

    • Allow the casserole to cool for about 5-10 minutes before serving.

Notes

  • For added flavor, consider mixing some sautéed spinach or steamed broccoli into the casserole before baking.
  • This dish pairs well with a fresh green salad or roasted vegetables.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
