  • Filling:
    • 1 tablespoon olive oil
    • 1 cup green bell pepper, chopped
    • 1/2 cup onion, chopped
    • 1/2 cup celery, chopped
    • 1 pound hot dogs, cut into bite-sized pieces
    • 1 can (15 ounces) chili with beans
    • 2 tablespoons brown sugar
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon chili powder
    • 1 cup shredded cheddar cheese, divided

Instructions

  1. Prepare the Cornbread Batter:
    • Preheat your oven to 350°F (175°C).
    • Grease an 8-inch square baking dish.
    • Prepare the cornbread batter according to the package instructions.
    • Spread half of the batter evenly into the prepared baking dish.
  2. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped green bell pepper, onion, and celery.
    • Cook, stirring occasionally, until the vegetables are crisp-tender, about 5-7 minutes.
  3. Add Hot Dogs and Seasonings:
    • Stir in the hot dog pieces and cook until lightly browned, about 3-4 minutes.
    • Add the chili, brown sugar, garlic powder, and chili powder to the skillet.
    • Stir well and cook until heated through.
    • Mix in 3/4 cup of the shredded cheddar cheese until melted and combined.
  4. Assemble the Casserole:
    • Spoon the hot dog and chili mixture over the cornbread batter in the baking dish.
    • Top with the remaining cornbread batter, spreading it evenly.
    • Sprinkle the remaining 1/4 cup of shredded cheddar cheese on top.
  5. Bake:
    • Bake, uncovered, in the preheated oven for 28-32 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the casserole to stand for 5 minutes before serving.
