  • For the Cookies:
    • 2 1/2 cups all-purpose flour
    • 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • 1/2 tsp peppermint extract
  • For the Topping:
    • 8 oz semi-sweet or dark chocolate, melted
    • 1 cup peppermint bark, crushed

Instructions

  1. Prepare the Dough:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In a large bowl, use a hand or stand mixer to cream the butter and sugar until light and fluffy, about 2-3 minutes.
    • Beat in the egg, vanilla extract, and peppermint extract until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  2. Chill and Roll:
    • Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
    • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    • Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to shape as desired.
  3. Bake the Cookies:
    • Place cookies on the prepared baking sheets, spacing them 2 inches apart.
    • Bake for 8-10 minutes, or until edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
  4. Decorate with Chocolate and Peppermint Bark:
    • Once cookies are cool, dip or spread the tops with melted chocolate.
    • Sprinkle crushed peppermint bark over the chocolate while it’s still wet. Let the chocolate set at room temperature or refrigerate briefly to speed up the process.
