Ingredients

Scale
  • For the salmon:
    • 2 lbs (900 g) salmon fillet, skin on
    • Salt, to taste
    • Black pepper, to taste
    • 1 lemon, sliced
  • For the glaze:
    • 3 tbsp honey
    • 2 tbsp Dijon mustard
    • 2 tbsp olive oil
    • 1 clove garlic, minced
    • 1 tsp fresh rosemary, chopped
    • 1 tsp fresh thyme, chopped
  • For garnish:
    • Fresh dill sprigs
    • Pomegranate arils
    • Lemon wedges

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Prepare the salmon: Place the salmon fillet on the prepared baking sheet. Pat it dry with paper towels. Season with salt and black pepper.
  3. Make the glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, rosemary, and thyme.
  4. Apply the glaze: Spread the glaze evenly over the salmon, making sure to coat the entire fillet.
  5. Bake the salmon: Arrange lemon slices on top of the salmon. Bake for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Garnish and serve: Remove the salmon from the oven. Garnish with fresh dill, pomegranate arils, and additional lemon wedges. Serve warm.

Notes

  • For a more caramelized finish, broil the salmon for the last 2 minutes of baking.
  • Use maple syrup instead of honey for a slightly different flavor profile.
  • Pair with roasted vegetables or a crisp green salad for a complete meal.
