These festive sausage rolls are perfect for holiday gatherings! Flaky puff pastry encases a flavorful filling of seasoned sausage, with a touch of cranberry sauce and sage to bring a festive twist. They’re easy to make and always a hit on the Christmas table.

  • For the Filling:
    • 500g sausage meat or high-quality pork sausages (casings removed)
    • 2 tablespoons cranberry sauce
    • 1 tablespoon chopped fresh sage (or 1 teaspoon dried sage)
    • 1/2 teaspoon ground nutmeg
    • Salt and pepper to taste
  • For the Pastry:
    • 1 sheet of puff pastry (store-bought or homemade)
    • 1 egg, beaten (for egg wash)
    • Sesame seeds or poppy seeds (optional, for topping)

Instructions

  1. Prepare the Filling:
    • In a mixing bowl, combine sausage meat, cranberry sauce, sage, nutmeg, salt, and pepper. Mix until well combined.
  2. Assemble the Rolls:
    • Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
    • Roll out the puff pastry on a lightly floured surface.
    • Cut the pastry into two long rectangles.
    • Place the sausage mixture down the center of each rectangle, shaping it into a log.
  3. Seal the Rolls:
    • Brush one edge of the pastry with beaten egg, then fold the other edge over to encase the filling.
    • Press the edges firmly to seal and use a fork to crimp the edges for decoration.
  4. Slice and Top:
    • Slice each log into bite-sized rolls (about 4–5 cm pieces).
    • Place them on the prepared baking sheet, seam-side down.
    • Brush the tops with beaten egg and sprinkle with sesame or poppy seeds, if using.
  5. Bake:
    • Bake in the preheated oven for 20–25 minutes, or until golden brown and cooked through.
  6. Serve:
    • Let the sausage rolls cool slightly before serving. They’re delicious warm or at room temperature.

Notes

  • For a sweeter twist, add a little extra cranberry sauce inside the rolls before sealing.
  • These can be made ahead and frozen before baking; just bake from frozen and add a few extra minutes to the cooking time.
