For the Cookie Base:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup rainbow sprinkles

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Prepare the Cookie Base:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
    • Beat in the eggs, one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
    • Fold in the sprinkles.
  3. Make the Cream Cheese Layer:
    • In a separate bowl, beat the cream cheese and sugar together until smooth.
    • Add the egg and vanilla, mixing until well combined.
  4. Assemble the Bars:
    • Press half of the cookie dough mixture evenly into the prepared pan.
    • Spread the cream cheese mixture evenly over the cookie base.
    • Crumble or drop small pieces of the remaining cookie dough on top of the cream cheese layer.
  5. Bake:
    Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
  6. Cool and Serve:
    Allow the bars to cool completely in the pan before slicing into squares.
