For the Crust:

  • 2 cups vanilla wafer crumbs (about 50 wafers)
  • 1/2 cup unsalted butter, melted

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup mashed ripe bananas (about 2 small bananas)
  • 1 tsp vanilla extract

For the Banana Pudding Layer:

  • 1 package (3.4 oz) instant banana pudding mix
  • 1 1/2 cups cold milk

For the Topping:

  • 1 1/2 cups whipped cream or whipped topping
  • 1/2 cup vanilla wafer crumbs (for garnish)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • Mix the vanilla wafer crumbs and melted butter in a bowl until combined.
    • Press the mixture evenly into the bottom of a 9×13-inch baking dish.
    • Bake for 8-10 minutes, then let it cool completely.
  2. Make the Cheesecake Layer:
    • In a large bowl, beat the cream cheese and sugar until smooth.
    • Add eggs, one at a time, mixing well after each addition.
    • Stir in the mashed bananas and vanilla extract.
    • Pour the mixture over the cooled crust and bake for 25-30 minutes, or until the center is set.
    • Let it cool to room temperature, then refrigerate for at least 1 hour.
  3. Prepare the Banana Pudding Layer:
    • In a medium bowl, whisk together the pudding mix and cold milk until thickened, about 2 minutes.
    • Spread the pudding evenly over the cheesecake layer.
  4. Add the Topping:
    • Spread the whipped cream over the banana pudding layer.
    • Sprinkle the remaining vanilla wafer crumbs on top for garnish.
  5. Chill and Serve:
    • Refrigerate the bars for at least 2 hours before slicing. Serve chilled and enjoy!
