  • 12 oz pasta (penne, fettuccine, or linguine)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts (cut into strips or bite-sized pieces)
  • 2 tablespoons Cajun seasoning (plus extra for garnish)
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup bell peppers (red, yellow, or green), sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • Salt and black pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  • Cook the pasta:
    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

  • Season and cook the chicken:
    In a large skillet, heat olive oil over medium-high heat. Toss the chicken pieces with 2 tablespoons of Cajun seasoning. Add the chicken to the skillet and cook for 5-6 minutes, flipping halfway through until fully cooked and slightly crispy. Remove from the pan and set aside.

  • Sauté the vegetables:
    In the same skillet, add butter and sauté the onion, garlic, and bell peppers until softened, about 3-4 minutes.

  • Make the creamy Cajun sauce:
    Lower the heat to medium and pour in the heavy cream and chicken broth. Stir in Parmesan cheese until melted and smooth. Add a pinch of Cajun seasoning, salt, and pepper to taste. Let the sauce simmer for 3-5 minutes until it thickens slightly.

  • Combine everything:
    Add the cooked pasta and chicken back into the skillet. Toss until everything is coated evenly with the creamy sauce. If the sauce is too thick, add a bit of reserved pasta water until desired consistency is reached.

  • Serve:
    Garnish with fresh parsley, an extra sprinkle of Parmesan cheese, and a dash of Cajun seasoning for extra heat if desired. Serve hot!
