This hearty dish features tender beef tips slow-cooked in a rich, savory gravy, served over egg noodles. It’s perfect for busy days when you want a satisfying meal with minimal effort.

  • 2 pounds beef stew meat or beef tips
  • 1 medium onion, diced
  • 3 cups beef broth
  • 1 packet (1 oz) onion soup mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1/4 cup water
  • 12 oz egg noodles, cooked
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: In the crockpot, combine the beef stew meat, diced onion, beef broth, cream of mushroom soup, onion soup mix, Worcestershire sauce, minced garlic, dried thyme, and black pepper. Stir to mix well.
  2. Cook: Cover the slow cooker and set it to low for 6–8 hours, or high for 3–4 hours, until the beef is tender.
  3. Thicken the Sauce: About 30 minutes before serving, whisk together the flour and water in a small bowl to create a slurry. Stir this into the crockpot to thicken the gravy.
  4. Prepare the Noodles: While the sauce thickens, cook the egg noodles according to the package instructions. Drain and set aside.
  5. Serve: Plate the cooked egg noodles and ladle the beef tips and gravy over them. Garnish with fresh parsley if desired.

Notes

  • For added flavor, you can brown the beef in a skillet before adding it to the slow cooker.
  • If you prefer a thicker gravy, adjust the amount of flour in the slurry as needed.
