Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup low-sodium chicken broth
  • 1 (6-ounce) box Stove Top chicken stuffing mix
  • 2 cups frozen or fresh green beans (optional)

Instructions

  1. Prepare the Chicken:

    • Place the chicken breasts or thighs at the bottom of a greased 6-quart crockpot.
    • Season with garlic powder, onion powder, salt, and pepper.
  2. Make the Sauce:

    • In a medium bowl, mix the cream of chicken soup and sour cream until smooth.
    • Spread this mixture over the chicken.
  3. Add Stuffing and Broth:

    • Sprinkle the dry stuffing mix evenly over the soup layer.
    • Pour the chicken broth over the stuffing to moisten.
  4. Add Vegetables (Optional):

    • If desired, layer the green beans on top of the stuffing mix.
  5. Cook:

    • Cover with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the stuffing is fully cooked.
  6. Serve:

    • Stir gently to combine layers (optional).
    • Serve warm with a side of cranberry sauce or a salad for a complete meal.

Notes

  • Stuffing Texture: For a crisper stuffing, remove the crockpot lid during the last 30 minutes of cooking to let some of the moisture evaporate.
  • Variations: You can swap green beans for broccoli, carrots, or corn based on your preference.
  • Leftovers: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
