  • 1 cup warm milk (about 110°F)
  • 2¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs, room temperature

  • 4 cups all-purpose flour
  • 1 teaspoon salt

For the Filling:

  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • ½ cup ube halaya (ube jam)

For the Cream Cheese Frosting:

  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  • Prepare the Dough:
    • In a large bowl, combine warm milk and 1 tablespoon of sugar. Sprinkle yeast over the top and let it sit for 5-10 minutes until foamy.
    • Add the remaining sugar, melted butter, eggs, ube extract, and salt to the yeast mixture. Mix well.
    • Gradually add flour, mixing until a soft dough forms. Knead the dough on a floured surface for about 6-8 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Prepare the Filling:
    • In a bowl, mix softened butter, brown sugar, cinnamon, and ube halaya until well combined.
  • Assemble the Rolls:
    • Punch down the risen dough and roll it out on a floured surface into a 15×12-inch rectangle.
    • Spread the ube filling evenly over the dough.
    • Starting from the long edge, tightly roll up the dough into a log.
    • Cut the log into 12 equal pieces and place them in a greased 9×13-inch baking pan.
    • Cover and let the rolls rise for another 30-45 minutes until doubled.
  • Bake:
    • Preheat the oven to 350°F (175°C).
    • Bake the rolls for 20-25 minutes until golden brown.
    • Remove from the oven and let them cool slightly.
  • Prepare the Cream Cheese Frosting:
    • In a bowl, beat together cream cheese and butter until smooth.
    • Add powdered sugar, vanilla extract, and milk. Mix until creamy.
  • Frost and Serve:
    • Spread the cream cheese frosting over the warm rolls.
    • Serve immediately and enjoy!
