Ingredients

Scale

1 lb ground beef

1 small onion, chopped

1 packet taco seasoning

1 can (10.5 oz) cream of mushroom soup

1 can (10 oz) diced tomatoes with green chilies (optional)

1 cup sour cream

2 cups shredded cheddar cheese

4 cups Doritos (crushed)

1/2 cup milk

1 cup shredded lettuce (optional, for topping)

1/2 cup sliced black olives (optional, for topping)

Instructions

Preheat oven: Preheat the oven to 350°F (175°C).

Cook the beef: In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.

Add seasonings: Stir in the taco seasoning and diced tomatoes (if using), followed by the cream of mushroom soup, sour cream, and milk. Mix until everything is well combined and heated through.

Layer the casserole: In a greased 9×13-inch baking dish, layer half of the crushed Doritos on the bottom. Pour half of the beef mixture on top, then sprinkle with 1 cup of shredded cheddar cheese. Repeat the layers with the remaining Doritos, beef mixture, and cheese.

Bake: Cover with aluminum foil and bake for 20-25 minutes, or until the cheese is melted and bubbly. Remove the foil during the last 5 minutes of baking for a crispy top.

Serve: Once out of the oven, top the casserole with optional shredded lettuce and black olives for added crunch and flavor. Serve hot!

Notes

  • You can use ground turkey or chicken instead of ground beef for a leaner option.
  • If you prefer spicier food, try using a spicier taco seasoning or adding a can of diced jalapeños.
  • This casserole can be made ahead of time and stored in the fridge for 1-2 days before baking.
  • For a vegetarian option, use meatless crumbles or additional beans in place of the ground beef.
