Easter Bunny Chow is a sweet and colorful twist on the classic Muddy Buddies (or Puppy Chow). It’s made with Chex cereal, creamy peanut butter, white chocolate, and powdered sugar, then topped with pastel candies for a festive Easter treat. Perfect for parties, gifts, or snacking!

Ingredients

  • 9 cups Rice Chex cereal
  • 1 cup white chocolate chips (or candy melts)
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 1 cup pastel-colored M&M’s
  • 1/2 cup pastel sprinkles

Instructions

  1. In a large mixing bowl, add the Rice Chex cereal and set aside.
  2. In a microwave-safe bowl, combine the white chocolate chips, peanut butter, and butter. Microwave in 30-second increments, stirring after each, until melted and smooth.
  3. Stir in the vanilla extract to the melted mixture.
  4. Pour the mixture over the cereal and gently toss to coat evenly.
  5. Add the powdered sugar to a large resealable plastic bag or large bowl. Transfer the coated cereal into the bag or bowl and shake or toss until well-coated with powdered sugar.
  6. Spread the cereal mixture out onto a lined baking sheet to cool and set.
  7. Once cooled, mix in the pastel M&M’s and sprinkles.
  8. Store in an airtight container until ready to serve.

Notes

  • For a nut-free version, substitute the peanut butter with sunflower seed butter.
  • You can use dark or milk chocolate chips instead of white chocolate for a richer flavor.
  • Store in an airtight container at room temperature for up to 5 days.
