Easy French Onion Soup

This classic French onion soup is rich, hearty, and comforting. Sweet caramelized onions simmered in a flavorful broth topped with crusty bread and gooey melted cheese make it a perfect dish for cold nights. It’s simple to prepare and tastes just like a gourmet restaurant version!

For the soup:

  • 4 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 6 cups beef broth (or vegetable broth for a vegetarian option)
  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For topping:

  • 6 slices of French baguette, toasted
  • 1 1/2 cups grated Gruyère cheese (or Swiss cheese)

Instructions

  1. Caramelize the onions:
    • Heat the butter and olive oil in a large pot over medium heat.
    • Add the sliced onions and sprinkle with sugar. Cook, stirring occasionally, for 30–40 minutes until the onions are deeply caramelized and golden brown.
  2. Add garlic and deglaze:
    • Stir in the minced garlic and cook for 1 minute until fragrant.
    • If using wine, pour it in to deglaze the pot, scraping up any browned bits. Let it simmer for 3–4 minutes.
  3. Simmer the soup:
    • Add the beef broth, bay leaf, and thyme. Bring to a boil, then reduce the heat and simmer uncovered for 20–30 minutes. Season with salt and pepper to taste.
  4. Prepare the topping:
    • Preheat your broiler. Place the toasted baguette slices on a baking sheet and sprinkle generously with Gruyère cheese. Broil for 2–3 minutes until the cheese is bubbly and golden.
  5. Assemble and serve:
    • Ladle the hot soup into bowls and top each with a cheese-topped baguette slice. Serve immediately and enjoy!

Notes

  • For a vegetarian option, use vegetable broth and skip the wine.
  • If Gruyère isn’t available, substitute with Emmental or mozzarella cheese.
