1 tsp smoked paprika (optional)
1/2 cup diced onions
1/2 cup diced bell peppers (any color)
1/2 cup cooked and crumbled breakfast sausage or bacon (optional)
1 cup shredded cheddar cheese (or Monterey Jack)
6 small flour or corn tortillas
1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
Prepare Egg Mixture:Â In a large bowl, whisk together the eggs, milk, salt, pepper, and smoked paprika until well combined.
Layer Ingredients:Â Place two tortillas on the bottom of the baking dish. Spread a third of the onions, bell peppers, and sausage (if using) over the tortillas. Sprinkle with a third of the cheese. Repeat this process for two more layers.
Pour Egg Mixture:Â Pour the egg mixture evenly over the layers, ensuring it seeps down to the bottom.
Bake:Â Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the eggs are fully set and the top is golden.
Cool and Serve:Â Let the bake cool for 5 minutes. Garnish with fresh cilantro if desired. Slice into squares and serve warm.
