For the Cookies:

  • 2 ¼ cups (280g) all-purpose flour
  • 2 tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) eggnog
  • 1 tsp vanilla extract
  • 1 large egg

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 2–3 tbsp eggnog
  • A pinch of nutmeg (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. Cream Butter and Sugar: In a large bowl, use a hand or stand mixer to cream the butter and sugar together until light and fluffy, about 2–3 minutes.
  4. Add Wet Ingredients: Mix in the eggnog, vanilla extract, and egg until fully combined. The mixture may look slightly curdled—that’s okay.
  5. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  6. Scoop Dough: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake: Bake for 10–12 minutes, or until the edges are lightly golden. Remove from oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  8. Prepare the Glaze: In a small bowl, whisk together powdered sugar and eggnog until smooth and pourable. Adjust the consistency by adding more eggnog if needed.
  9. Decorate: Drizzle the glaze over the cooled cookies and sprinkle with a pinch of nutmeg if desired. Let the glaze set before serving.

Notes

  • For a stronger eggnog flavor, add a pinch of rum extract to the dough.
  • Store cookies in an airtight container at room temperature for up to 5 days.
