For the Creamy Parmesan Pasta:

  • 12 oz (340g) pasta (fettuccine, penne, or your choice)
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 tsp ground nutmeg (optional)
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Prepare the Sausage Bites:
    • Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned on both sides, about 3–4 minutes.
    • Lower the heat to medium and add butter and minced garlic. Sauté for 1–2 minutes, stirring, until garlic is fragrant. Sprinkle with paprika and black pepper. Remove from heat and set aside.
  2. Cook the Pasta:
    • In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  3. Make the Creamy Parmesan Sauce:
    • In the same skillet used for the sausage, melt butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
    • Stir in heavy cream and bring to a gentle simmer. Gradually whisk in Parmesan cheese until the sauce is smooth.
    • Add a pinch of nutmeg (if using) and season with salt and pepper. Adjust the consistency with reserved pasta water if needed.
  4. Combine:
    • Toss the cooked pasta in the creamy Parmesan sauce until well coated.
    • Top with garlic butter sausage bites and gently mix.
  5. Serve:
    • Transfer to serving plates and garnish with fresh parsley. Serve warm.
