  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Potatoes:
    • In a large skillet over medium-high heat, add 1 tablespoon of olive oil and 1 tablespoon of butter.
    • Once the butter has melted, add the quartered potatoes. Season with salt and pepper.
    • Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender.
    • Remove the potatoes from the skillet and set aside.
  2. Sear the Steak Bites:
    • In the same skillet, increase the heat to high and add 1 tablespoon of butter.
    • Once the butter is sizzling, add the steak cubes in a single layer.
    • Season with salt and pepper.
    • Sear the steak for about 1-2 minutes on each side until browned and cooked to your desired level of doneness.
    • Remove the steak bites from the skillet and set aside.
  3. Prepare the Garlic Butter Sauce:
    • Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet.
    • Add the minced garlic, thyme, and rosemary.
    • Sauté for about 1 minute until the garlic is fragrant.
  4. Combine and Serve:
    • Return the cooked potatoes and steak bites to the skillet.
    • Toss to coat everything evenly with the garlic butter sauce.
    • Cook for an additional 1-2 minutes to heat through.
    • Garnish with freshly chopped parsley before serving.
