For the Chicken & Steak:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 ribeye steaks, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

For the Cheesy Loaded Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • ½ cup heavy cream
  • ¼ cup sour cream
  • ¼ cup butter
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 4 slices bacon, cooked and crumbled
  • 3 green onions, sliced (green parts only)
  • Salt and pepper, to taste

Instructions

  1. Prepare the Cheesy Loaded Mashed Potatoes:
    • Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot. Add the heavy cream, sour cream, and butter. Mash until smooth, adding more cream if needed for desired consistency.
    • Stir in the shredded cheddar and mozzarella cheeses, crumbled bacon, and sliced green onions. Season with salt and pepper to taste. Set aside.
  2. Prepare the Chicken & Steak:
    • Preheat your oven to 400°F (200°C).
    • In a large bowl, combine the chicken and steak pieces. Add olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper. Toss until the meat is evenly coated.
    • Heat a large skillet over medium-high heat. Sear the meat in batches for 2-3 minutes on each side until browned. The meat does not need to be fully cooked at this stage.
  3. Assemble the Bake:
    • Spread the cheesy loaded mashed potatoes evenly in the bottom of a 9×13-inch baking dish.
    • Arrange the seared chicken and steak pieces on top of the mashed potatoes.
  4. Bake:
    • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the meat is cooked through and the top is golden brown.
  5. Serve:
    • Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley. Serve warm and enjoy!
