  • 1 cup brown sugar, packed

  • 2 large eggs
  • 1/3 cup molasses
  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Bars:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
    • In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
    • Add eggs, molasses, and vanilla extract. Mix until well combined.
    • In a separate bowl, whisk together the flour, baking soda, baking powder, ginger, cinnamon, cloves, and salt.
    • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
    • Spread the batter evenly into the prepared baking dish.
    • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the bars cool completely before frosting.
  2. Prepare the Frosting:
    • In a medium bowl, beat the cream cheese and butter together until smooth and creamy.
    • Gradually add powdered sugar, vanilla extract, and a pinch of salt, beating until smooth.
  3. Assemble:
    • Spread the frosting evenly over the cooled gingerbread bars.
    • Slice into squares or rectangles and serve.
