  • 1 cup (226g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest

Glaze:

  • 1 cup (120g) powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Prepare the Dough:
    Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  2. Mix the Wet Ingredients:
    In a large bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
    Add the egg, vanilla extract, lemon juice, and lemon zest. Mix until fully combined.
  3. Combine Ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
  4. Form the Cookies:
    Scoop out dough (about 1 tablespoon per cookie) and roll into balls. Place them on the prepared baking sheets, leaving 2 inches between each.
  5. Bake:
    Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. The centers will still look soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  6. Prepare the Glaze:
    In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
  7. Glaze the Cookies:
    Once the cookies are fully cooled, drizzle the glaze over each one or dip the tops into the glaze. Let the glaze set before serving.

  • For a more intense lemon flavor, add an additional teaspoon of lemon zest to the cookie dough.
