Ingredients

Scale

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water (plus more as needed)

For the Peach Filling:

  • 2 cups fresh peaches, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon juice

For Frying:

  • Vegetable oil (for deep frying)

Optional Toppings:

  • Powdered sugar
  • Vanilla glaze

Instructions

  1. Prepare the Dough:
    • In a large bowl, mix flour and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Gradually add ice water, 1 tablespoon at a time, mixing until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  2. Make the Peach Filling:
    • In a medium saucepan, combine peaches, granulated sugar, brown sugar, cornstarch, cinnamon, vanilla extract, and lemon juice.
    • Cook over medium heat for 5–7 minutes, stirring occasionally, until the mixture thickens. Remove from heat and cool completely.
  3. Assemble the Pies:
    • Roll out the dough on a floured surface to about 1/8-inch thickness. Cut into 4-inch circles.
    • Place a spoonful of the cooled peach filling in the center of each circle. Fold the dough over the filling to create a half-moon shape. Seal edges with a fork.
  4. Fry the Pies:
    • Heat 2–3 inches of vegetable oil in a deep skillet or fryer to 350°F (175°C).
    • Fry the pies in small batches for 2–3 minutes per side, or until golden brown. Remove with a slotted spoon and drain on a paper towel-lined plate.
  5. Optional Toppings:
    • Dust with powdered sugar or drizzle with vanilla glaze for extra sweetness.

Notes

  • For a shortcut, you can use store-bought pie dough.
  • To bake instead of frying, brush the pies with egg wash and bake at 400°F (200°C) for 20–25 minutes.
  • Ensure the peach filling is fully cooled before assembling to prevent soggy dough.
