For the caramel coating:

  • 6 medium apples (Granny Smith or Honeycrisp work best)
  • 6 wooden sticks
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (115 g) unsalted butter
  • 1 cup (200 g) packed brown sugar
  • 1/2 cup (120 ml) light corn syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

  • Chopped nuts (pecans, peanuts, or almonds)
  • Crushed cookies or candies
  • Mini chocolate chips
  • Melted chocolate for drizzling

Instructions

  1. Prepare the apples:
    Wash and thoroughly dry the apples to remove any wax. Insert a wooden stick into the top of each apple and set them on a parchment-lined baking sheet.
  2. Make the caramel:
    In a medium saucepan, combine the heavy cream, butter, brown sugar, corn syrup, and salt. Cook over medium heat, stirring until the butter is melted and the sugar is dissolved.
  3. Cook the caramel:
    Bring the mixture to a boil, then reduce heat to medium-low. Allow it to simmer without stirring until it reaches 240°F (115°C) on a candy thermometer (soft-ball stage). Remove from heat and stir in vanilla extract.
  4. Coat the apples:
    Let the caramel cool slightly for 2-3 minutes. Dip each apple into the caramel, tilting the pan as needed to fully coat. Let excess caramel drip off, then place the apple on the parchment-lined sheet.
  5. Add toppings:
    Before the caramel sets, quickly roll or sprinkle the apples with your desired toppings. For a chocolate drizzle, wait until the caramel is set, then drizzle melted chocolate over the apples.
  6. Set and serve:
    Allow the apples to cool completely at room temperature or in the refrigerator for 20-30 minutes.
