  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups (160g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter and softened butter. Mix until creamy and well blended.
  3. Add the granulated sugar, brown sugar, and vanilla extract. Beat until smooth.
  4. Mix in the egg, ensuring it is fully incorporated.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Scoop 2 tablespoons of dough and roll into a ball. Place on the prepared baking sheet, leaving about 2 inches between cookies.
  7. Flatten each dough ball slightly with a fork in a crisscross pattern.
  8. Bake for 10–12 minutes, or until the edges are lightly golden. The cookies will look slightly underbaked but will firm up as they cool.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
