These delightful chews combine the earthy flavor of green tea, the zesty tang of lemon, and the warmth of ginger. Perfect as a healthy snack or a natural remedy for soothing your throat, these chews are packed with antioxidants and a burst of refreshing flavor.

Ingredients

  • 2 cups honey
  • 2 tbsp green tea leaves (or 2 green tea bags)
  • 1 tbsp fresh ginger, grated
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • ½ cup powdered sugar (for coating, optional)

Instructions

  1. Steep the tea:
    • Heat ¼ cup of water to just below boiling and steep the green tea leaves (or tea bags) for 5 minutes. Strain and set the tea aside.
  2. Prepare the ginger and lemon:
    • In a small saucepan, combine the honey, grated ginger, lemon zest, and lemon juice. Stir in the steeped green tea.
  3. Cook the mixture:
    • Cook the mixture over medium heat, stirring constantly. Use a candy thermometer to monitor the temperature. Heat until it reaches 300°F (hard-crack stage).
  4. Pour and cool:
    • Carefully pour the hot mixture onto a parchment-lined baking sheet. Allow it to cool slightly until it’s safe to handle.
  5. Shape the chews:
    • Once cool enough to touch but still pliable, cut or roll the mixture into small pieces. Dust with powdered sugar to prevent sticking if desired.
  6. Store:
    • Store the chews in an airtight container at room temperature.

Notes

  • For a stronger ginger flavor, add an extra teaspoon of freshly grated ginger.
  • Use silicone molds for perfectly shaped chews.
  • Keep the candy thermometer clean and calibrated for best results.
