  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil (or vegetable oil)
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • Salt and pepper to taste
  • 1/2 cup beef broth or water
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook, breaking it up with a wooden spoon, until browned. Drain excess fat if necessary.
  3. Add the diced onion and garlic to the skillet. Sauté for 2-3 minutes until softened and fragrant.
  4. Stir in the diced potatoes. Sprinkle with paprika, cumin, chili powder (if using), salt, and pepper. Mix well.
  5. Pour in the beef broth or water. Cover the skillet and reduce the heat to low. Let it simmer for 15-20 minutes, stirring occasionally, until the potatoes are tender and the liquid is absorbed.
  6. Adjust seasoning if needed.
  7. Garnish with chopped parsley or green onions before serving.
