This Mediterranean Chicken and Orzo is a bright and hearty dish with juicy chicken, tender orzo, and Mediterranean flavors like tomatoes, olives, lemon, and feta. Made in one skillet, it’s perfect for a weeknight meal!

 

Ingredients

For the Chicken:

2 boneless, skinless chicken breasts, cut into bite-sized pieces

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon oregano

2 tablespoons olive oil

For the Orzo:

1 tablespoon olive oil

½ onion, diced

3 cloves garlic, minced

1 cup orzo pasta

2 cups chicken broth

1 teaspoon oregano

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

½ cup cherry tomatoes, halved

½ cup Kalamata olives, sliced

Juice and zest of 1 lemon

½ cup crumbled feta cheese

2 tablespoons fresh parsley or basil, chopped

Instructions

Step 1: Cook the Chicken

  1. Season chicken pieces with salt, pepper, garlic powder, paprika, and oregano.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5-6 minutes, until golden and cooked through. Remove from the pan and set aside.

Step 2: Cook the Orzo

  1. In the same skillet, add 1 tablespoon olive oil and sauté onion for 2-3 minutes, until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in orzo and toast for 1 minute to enhance flavor.
  4. Pour in chicken broth, oregano, salt, black pepper, and red pepper flakes (if using). Bring to a gentle simmer and cook for 8-10 minutes, stirring occasionally, until the orzo is tender.

Step 3: Combine & Serve

  1. Stir in cherry tomatoes, olives, lemon juice, and lemon zest.
  2. Return the cooked chicken to the skillet and mix everything together. Let it warm for 1-2 minutes.
  3. Remove from heat and sprinkle with feta cheese and fresh parsley.
  4. Serve immediately with extra lemon wedges. Enjoy!

Notes

Want to make it vegetarian? Swap the chicken for chickpeas or grilled halloumi.

Prefer a richer sauce? Stir in a splash of heavy cream or Greek yogurt.
