These Mediterranean Pastry Pinwheels are flaky, buttery puff pastry swirls filled with a savory mix of feta cheese, spinach, sun-dried tomatoes, and olives. Perfect as an appetizer or snack, they’re a crowd-pleaser that’s quick to make and bursting with flavor.

  • 1 sheet puff pastry (thawed)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup sun-dried tomatoes (finely chopped)
  • 1/4 cup Kalamata olives (pitted and chopped)
  • 1 egg (beaten, for egg wash)
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare Filling: In a bowl, combine the spinach, feta cheese, sun-dried tomatoes, olives, oregano, garlic powder, salt, and pepper. Mix well.
  3. Assemble Pastry: Roll out the puff pastry sheet on a lightly floured surface. Spread the filling evenly over the pastry, leaving a 1-inch border on one edge.
  4. Roll & Slice: Roll the pastry tightly into a log, starting from the edge opposite the border. Seal the edge with a bit of beaten egg. Slice the log into 1/2-inch-thick pinwheels.
  5. Bake: Arrange the pinwheels on the prepared baking sheet. Brush the tops with the beaten egg. Bake for 15-18 minutes or until golden and puffed.
  6. Serve: Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • You can substitute feta with goat cheese or cream cheese for a milder flavor.
  • For a vegan option, use dairy-free cheese and skip the egg wash (or use a plant-based milk wash).
