These adorable biscuits feature a ‘melted’ snowman made from icing and marshmallows atop a buttery shortbread base. They’re fun to make and perfect for involving kids in holiday baking.

or the Biscuits:

  • 175g (¾ cup) unsalted butter, softened
  • 175g (1½ cups) plain flour
  • 50g (½ cup) icing (confectioners) sugar
  • 50g (½ cup) cornflour (cornstarch)

To Decorate:

  • 12 white marshmallows
  • 1 cup icing (confectioners) sugar
  • Water (as needed)
  • Black and orange writing icing pens
  • Mini chocolate chips or colored candies for buttons

Instructions

  1. Prepare the Biscuits:
    • Preheat your oven to 180°C (160°C fan) or 350°F. Line a baking tray with baking paper.
    • In a large bowl, combine the softened butter, plain flour, icing sugar, and cornflour. Mix until the mixture resembles breadcrumbs, then continue mixing until it forms a smooth dough.
    • On a lightly floured surface, roll out the dough to about 0.5 cm (¼ inch) thickness.
    • Use a round cookie cutter (about 7-8 cm in diameter) to cut out biscuits and place them on the prepared baking tray.
    • Bake for approximately 10 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool completely on a wire rack.
  2. Decorate the Biscuits:
    • In a bowl, mix the icing sugar with a small amount of water to create a thick, spreadable icing.
    • Spoon a generous amount of icing onto each cooled biscuit, allowing it to spread unevenly to resemble melted snow.
    • Place a marshmallow near the edge of each biscuit to represent the snowman’s head.
    • Use the black writing icing pen to draw eyes and a mouth on the marshmallow, and the orange pen to add a carrot nose.
    • Add mini chocolate chips or colored candies below the marshmallow to represent buttons.
    • Optionally, use the black icing to draw stick arms extending from the sides of the icing puddle.
    • Allow the decorated biscuits to set until the icing is firm.

Notes

  • These biscuits can be stored in an airtight container for up to three days.
  • For added flavor, consider adding a teaspoon of vanilla extract to the biscuit dough.
  • Get creative with decorations by adding scarves or hats using colored fondant or additional icing.
