This Beer Cheese Fondue replicates the rich and flavorful experience from The Melting Pot. It’s perfect for gatherings, offering a delightful dip for bread, vegetables, and fruits.

Ingredients

  • 1 cup (240 ml) lager beer
  • 2 teaspoons minced garlic
  • 1 teaspoon dry mustard powder
  • 2 teaspoons Worcestershire sauce
  • 6 ounces (170 g) medium-sharp cheddar cheese, freshly grated
  • 2 ounces (57 g) Emmentaler Swiss cheese, freshly grated
  • 1 tablespoon cornstarch
  • Freshly ground black pepper, to taste

Instructions

  • Prepare the Cheese: In a bowl, combine the grated cheddar and Emmentaler cheeses with the cornstarch, tossing to coat evenly. This helps prevent clumping during melting.
  • Heat the Base: In a fondue pot or medium saucepan over medium heat, add the lager beer, minced garlic, dry mustard powder, and Worcestershire sauce. Stir to combine and heat until the mixture is warm, but not boiling.
  • Add the Cheese: Gradually add a handful of the cheese mixture to the pot, stirring constantly until melted and smooth. Continue adding the cheese in small batches, ensuring each addition is fully melted before adding the next.
  • Season and Serve: Once all the cheese is incorporated and the fondue is smooth, season with freshly ground black pepper to taste. Reduce the heat to low to keep the fondue warm. Serve immediately with your choice of dippers.

Notes

  • For best results, use freshly grated cheese rather than pre-shredded, as the latter contains additives that can affect melting.
  • If the fondue is too thick, gradually add a little more beer to reach the desired consistency. If it’s too thin, add more cheese, a small amount at a time.
  • This recipe contains alcohol; if you prefer a non-alcoholic version, substitute the beer with non-alcoholic beer or low-sodium chicken broth.
